Tis the season for communions and weddings!  With the sun shining and the sandals coming out we are entering the first few weeks of Spring and that time of year where every weekend is booked solid with weddings, bridal showers and communions.  The cookie Nonnina is making today is traditional for all these events.  Commonly made in Italy these cookies are a staple on any cookie table and in cookie takeaway boxes.  If you are making them for a baby or bridal shower, you can add a colour to them to keep with the festive theme.  These were the cookies made for my communion, my sisters and all my cousins. Mind you, even though these are "typically" made around these occasions, they can be enjoyed year round and are definitely welcome in my house any day of the week.  These cookies can be whipped up just as quick as they'll disappear with only 5 very simple ingredients, check out the recipe below, YUM.

ingredients:

  • 3 egg whites
  • Pinch of Cream of Tar Tar
  • 1 TBSP of lemon juice
  • 1 cup of sugar
  • 2 cups of lightly roasted slivered almonds

directions:

  1. In a mixer combine egg whites, lemon juice and cream of tar tar and beat for a minute until combined.
  2. Slowly add the sugar and beat until it forms peaks - approx. 7 minutes.
  3. Fold in the slivered almonds, DO NOT STIR this will cause the cookie to fall flat.
  4. Cover a cookie sheet with parchment paper and spoon dollops of the batter on to the sheet.
  5. Bake at 275 for 20 minutes.
